  • 1 cup sugar
  • 2/3 cup fresh key lime juice
  • 1/4 cup butter, cut into pieces
  • 3 eggs, lightly beaten
  • 1 - 14.1-oz. pkg. refrigerated pie crusts
  • 1 1/4 cups whipped cream

INSTRUCTIONS
  • Combine sugar and lime juice in a deep, 2-quart, microwave-safe bowl. Stir in butter and eggs. Microwave on HIGH 4 to 6 minutes, whisking every 45 seconds, or until mixture is thickened and coats back of spoon. (Mixture is hot and bubbles up sides of bowl. Use oven mitts when removing bowl from microwave.) Set aside and cool.
  • Preheat oven to 400°F. Roll out 1 pie crust on lightly floured surface to 12-inches diameter. Dip Bottom Crust Cutter in flour before using. Cut out 9 bottom crusts; line 9 cavities of Mini-Pie Pan. Prick bottom and sides of each with a fork. Dip Mini-Cutter in flour before using. Cut 9 mini cut-outs. Transfer mini cut-outs to a small baking sheet.
  • Bake 8 minutes; reduce temperature to 325°F. Bake 4-6 minutes. Remove from oven to cooling rack. Cool slightly; remove shells. Repeat using remaining pie crust. Spoon 1 rounded tablespoon filling into each cooled pie shell. Refrigerate 35 to 40 minutes or until set. Before serving, pipe 1 rounded tablespoon whipped cream on each and top with mini cut-out.
