INGREDIENTS
Special Tools: Multi Tier Cake Pan
  • 1 1/2 sticks softened butter
  • 1 1/2 cups granulated sugar
  • 4 oz cream cheese
  • 4 eggs
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 2 tablespoons vanilla extract

Variation: Substitute lemon juice for vanilla extract and add zest of 1 lemon.

INSTRUCTIONS
  • Preheat oven to 350°F.
  • Spray pan thoroughly with vegetable spray before use.
  • Put butter, cream cheese and sugar in bowl and cream together until smooth, light and fluffy.
  • Add the eggs and vanilla and continue to mix until fully incorporated.
  • Pour in flour and salt; stir thoroughly until there are no lumps.
  • Fill each cup to the bottom of largest tier.
  • Bake for 15 minutes and then turn pan to promote even baking.
  • Bake another 12-15 minutes; use bamboo skewer to test doneness and easily reach bottom of cake.
  • Let cool completely before removing cakes from pan.

HINT: If cake does not sit level, trim cake bottom until flat. Decorate with fondant, frosting or slice each “tier” and cover with fresh berries or sauce.
