  • 1 1/2 cup all-purpose flour
  • 1 1/4 cup sugar
  • 1 cup (2 sticks) unsalted butter, softened
  • 2 eggs
  • 1 1/2 teaspoons vanilla extract
  • 1 teaspoon lemon juice
  • 2/3 cup milk

INSTRUCTIONS
  • Preheat oven to 350°F.
  • Line a baking sheet with parchment paper and place silicone mold on top.
  • Spray each cavity with non-stick cooking spray; set aside.
  • Place flour in a small bowl; set aside.
  • Combine sugar and butter in the bowl of an electric stand mixer fitted with a paddle; beat on medium-high speed until light and fluffy, 2 to 3 minutes.
  • Add eggs, vanilla and lemon juice; continue beating 1 minute to incorporate.
  • Reduce mixer speed to low and slowly add 1/2 of the flour, followed by 1/2 of the milk; repeat, ending with the milk. Scrape down sides of mixer bowl then return to medium-high speed and continue beating 1 to 2 minutes, or until batter is smooth.
  • Pour batter into a piping bag fitted with a large (1/2-inch) tip.
  • Fill each cavity 3/4 full. Bake 25 to 28 minutes, or until golden brown.
  • Cool on baking sheet 5 minutes, then transfer to wire rack to cool completely.
  • To remove, invert molds and gently press cakes out.

*Note: For best results, allow cakes to cool completely before removing.
