For the cookies:
  • 3 cups flour
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • red & green gel food coloring

For the icing:
  • 2 cups powdered sugar, separated
  • 3 tablespoons milk
  • 1/4 teaspoon lemon extract
  • gel food coloring (optional)

Prepare the cookies:
  • Whisk together flour and salt in a small bowl; set aside.
  • Using an electric mixer, beat butter and sugar on medium speed until light and fluffy, 2 to 3 minutes. Add egg and vanilla extract; beat 1 minute to incorporate.
  • Scrape down sides of mixer bowl.
  • Slowly add flour mixture.
  • Continue beating on low speed 4 to 6 minutes, or until a soft ball has formed. NOTE: the dough will look crumbly for the first few minutes.
  • Remove dough, divide in half; place in separate bowls.
  • Add gel food coloring to each. Mix with spatula to incorporate color; kneed by hand if necessary.
  • Shape each into a disk.
  • Cover in plastic wrap; Refrigerate at least one hour or up to overnight.
  • Preheat oven to 350⁰F.
  • Line 2 baking sheets with parchment paper; set aside.
  • Remove 1 disk from refrigerator.
  • On well-floured surface, roll dough out to 1/8 -inch thickness.
  • Dip cookie cutters into flour; shake off excess.
  • Cut shapes, then lightly press down rod to punch in cookie details.
  • Collect scraps and re-roll up to two times.
  • Repeat with remaining colored dough.
  • Place on prepared baking sheets, about 1/2-inch apart.
  • Refrigerate 10 minutes.
  • Bake cookies 7 to 8 minutes.
  • Cool on baking sheets 2 to 3 minutes, then transfer to wire rack to cool completely.

Prepare the icing:
  • Mix 1 cup powdered sugar and milk in a mixer on medium speed for about 1 minute.
  • Add lemon extract and beat on high speed for 30 seconds.
  • Turn the mixer speed to low, and add the remaining confectioners’ sugar.
  • Increase the mixer speed to high and beat for 1 min.
  • Scrape the sides and beat until incorporated.
  • Add optional color and mix to combine.
  • Transfer to a pastry bag with tiny decorators tip.
  • Decorate cookies as desired.

For best results dough must be chilled and rolled on a well-floured surface. If dough becomes to soft; re-chill until stiff.
