For the dough:
  • 3 1/2 cups flour
  • 2 teaspoons cinnamon
  • 1 teaspoon nutmeg
  • 1/2 teaspoon cloves
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon coriander
  • 1 egg
  • 3/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/2 cup molasses
  • 1/4 cup honey
  • 1/4 cup chopped walnuts
  • 1 teaspoons orange zest
  • 1 tablespoon orange juice

For the glaze:
  • 1 cup powdered sugar
  • 2 tablespoons orange juice
  • 1 tablespoon honey

INSTRUCTIONS
  • Sift together flour, cinnamon, nutmeg, cloves, baking soda and coriander; set aside.
  • Using an electric mixer, beat the egg, both sugars, molasses and honey on medium speed until think and foamy, about 2 minutes.
  • Add walnuts, orange zest and orange juice.
  • Continue beating 1 minute to incorporate. Gradually add the flour mixture in thirds, then continue beating on medium speed until a stiff dough has formed.
  • Remove dough from mixer bowl; slightly knead by hand, then shape into a disk.
  • Cover in plastic wrap; refrigerate at least one hour or up to overnight.
  • Preheat oven to 350⁰F.
  • Line 2 baking sheets with parchment paper; set aside.
  • Remove dough from refrigerator.
  • On well-floured surface, roll dough out to 1/4-inch thickness.
  • Cut circles then place on prepared baking sheets, 8 cookies per sheet.
  • Bake 10-12 minutes or until edges start to brown.
  • Immediately transfer to cooling rack.

Prepare the glaze:
  • Combine powdered sugar, orange juice and honey in a small bowl.
  • Whisk until powdered sugar is completely incorporated and a thick glaze has formed.
  • Glaze cookies while still warm; once the glaze hardens and the cookies have completely cooled, transfer to an airtight container until ready to serve.
