- Sift together flour, cinnamon, nutmeg, cloves, baking soda and coriander; set aside.
- Using an electric mixer, beat the egg, both sugars, molasses and honey on medium speed until think and foamy, about 2 minutes.
- Add walnuts, orange zest and orange juice.
- Continue beating 1 minute to incorporate. Gradually add the flour mixture in thirds, then continue beating on medium speed until a stiff dough has formed.
- Remove dough from mixer bowl; slightly knead by hand, then shape into a disk.
- Cover in plastic wrap; refrigerate at least one hour or up to overnight.
- Preheat oven to 350⁰F.
- Line 2 baking sheets with parchment paper; set aside.
- Remove dough from refrigerator.
- On well-floured surface, roll dough out to 1/4-inch thickness.
- Cut circles then place on prepared baking sheets, 8 cookies per sheet.
- Bake 10-12 minutes or until edges start to brown.
- Immediately transfer to cooling rack.
- Combine powdered sugar, orange juice and honey in a small bowl.
- Whisk until powdered sugar is completely incorporated and a thick glaze has formed.
- Glaze cookies while still warm; once the glaze hardens and the cookies have completely cooled, transfer to an airtight container until ready to serve.
