  • 1/2 cup pistachios, shelled and processed into fine pieces
  • 1/3 cup flour
  • 1/4 teaspoon baking powder
  • 1 egg
  • 1 egg yolk
  • 1 teaspoon lemon juice
  • 1/2 teaspoon lemon zest
  • 1/2 teaspoon vanilla extract
  • 3/4 cup powdered sugar
  • 4 tablespoons butter, melted and slightly cooled

INSTRUCTIONS
  • Preheat the oven to 325⁰F.
  • Spray the Madeleine Pan with non-stick cooking spray; place greased pan on a baking sheet. Set aside.
  • Whisk together pistachios, flour and baking powder in a small bowl.
  • In the bowl of an electric mixer, beat egg, egg yolk, lemon juice, lemon zest and vanilla on medium speed for 5 minutes.
  • Add the powdered sugar and continue beating another 5 minutes.
  • Remove bowl from mixer; gently fold in pistachio mixture, then fold in melted butter.
  • Deposit batter into prepared Madeleine Pan.
  • Bake 10-12 minutes or until edges start to brown.
  • Cool in pans 15 minutes, then transfer to a wire rack to cool completely.

Helpful Hint: Madeleines are best if eaten the same day they are baked.
