  • 1 3/4 cups flour
  • 1/4 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup powdered sugar, divided
  • 1/2 cup walnuts, chopped
  • 1/2 cup pecans, chopped
  • 2 teaspoons vanilla extract
  • 1 teaspoon lemon juice

Yield : 2 Dozen Cookies
  • Line a baking sheet with parchment paper; set aside.
  • Combine flour and salt in a small bowl; set aside.
  • In the bowl of an electric mixer, beat butter and 1/3 cup powdered sugar until smooth, about 1 minute. Gradually add the flour mixture and beat until just incorporated.
  • Add walnuts, pecans, vanilla and lemon juice.
  • Scrap down the sides of the mixer bowl; continue beating until the dough has formed, about 2 minutes.
  • Roll dough into 1-inch balls; Place on prepared baking sheet, spacing 1-inch apart.
  • Transfer to the refrigerator for 1 hour.
  • Preheat the oven to 375⁰F.
  • Bake 12-15 minutes or until bottom of cookies start to golden.
  • Let cookies cool on pans 10 minutes, then gently roll cookies into remaining 2/3 cup powdered sugar. Transfer to a wire rack and cool completely.

Helpful Hint: Russian Teacakes are very delicate cookies and can crumble if not handled gently.
