INGREDIENTS
Kabob:
  • 3 wooden skewers, soaked in water for 20 minutes
  • 1 pound chicken breast, cut into 1 inch pieces
  • 1/2 yellow onion, cut into 1 inch pieces
  • 1 yellow bell pepper, cut in 1 inch pieces
  • 1 red bell pepper, cut into 1 inch pieces
  • 1 green bell pepper, cut into 1 inch pieces

Brine:
  • 2 cups water

  • 2 tabelspoons kosher salt

  • 2 tablespoons honey

  • 1/4 teaspoon red pepper flakes

  • 1 teaspoon garlic powder



Base Seasoning:
  • 1 teaspoon paprika

  • 1/4 teaspoon cayenne

  • 1 teaspoon garlic salt

  • 1 teaspoon Italian seasoning

  • 1/2 teaspoon ground sea salt

  • 1/4 teaspoon fresh cracked black pepper

INSTRUCTIONS
  • Cut chicken breast into 1 inch pieces.
  • In a large glass bowl whisk together water, salt, honey, pepper flakes, and garlic powder.
  • Add cubed chicken. Cover and refrigerate for about 1 hour.

  • Preheat oven 400°F.
  • Mix together base seasoning ingredients and place in a plastic bag.
  • Remove cubed chicken from brine and place in plastic bag with seasonings.
  • Discard brine.
  • Shake bag to evenly coat chicken.
  • Thread chicken, onion, and peppers onto skewers, place on roasting rack, and bake in for 15-20 minutes, or until chicken is cooked through.
