INGREDIENTS
  • 6 mini bell peppers, halved lengthwise
  • 1/4 pound spicy pork sausage
  • 1/2 yellow onion, diced
  • 1 clove garlic, minced
  • 2 tablespoons dry white wine
  • 1.5 oz. package baby spinach
  • 4 ounces part-skim ricotta cheese
  • 1/2 cup parmesan cheese, divided
  • 1 egg yolk

INSTRUCTIONS
  • Preheat oven to 350°F degrees.
  • Remove sausage from casing; discard casing.
  • Crumble sausage into small 1/4 inch pieces, and then cook in a skillet over medium heat, until brown and crisp.
  • Add onion and garlic; continue cooking 2 to 3 minutes.
  • Stir in wine and allow liquid to evaporate.
  • Add spinach; cook, stirring often until wilted, about 2 minutes. Set aside.
  • In a large bowl combine ricotta cheese, 1/4 cup parmesan cheese, and egg yolk; mix until well incorporated.
  • Add sausage mixture and stir together to combine.
  • Spoon filling into each mini bell pepper.
  • Sprinkle with remaining parmesan cheese.
  • Bake 30 to 35 minutes or until golden brown.
  • Cool 10 to 15 minutes, then serve.
