Chocolate Mousse for Devil's Food Maryann Cake

INGREDIENTS
  • ¼ Cup sugar
  • ¼ Cup water
  • 3 Squares (3 ounces) semisweet chocolate, broken up
  • 2 Egg yolks, beaten
  • 2 Egg whites
  • 2 Tablespoons sugar
  • ½ Cup whipping cream
  • About 1 ounce sliced almonds

INSTRUCTIONS
  • Combine ¼ cup sugar and the water in a small saucepan. Cook and stir over low heat until the sugar dissolves.
  • Add the chocolate and cook until the chocolate melts.
  • Gradually stir the chocolate mixture into the beaten egg yolks. Return the mixture to the saucepan. Bring to a boil and then cook on low heat about 2 minutes more. Cool to lukewarm.
  • Beat egg whites with an electric mixer until soft peaks form. Gradually add the 2 tablespoons of sugar and beat until stiff. Fold the lukewarm chocolate mixture into the egg whites.
  • Beat the whipping cream with an electric mixer until soft peaks form. Fold the cream into the egg white/chocolate mixture. When completely mixed, pour the mousse into the center of the chocolate cake. Garnish with the sliced almonds around the edge of the mousse.
